Chocolate Caramel Apples with Gourmet Pecans
Fall is one of our favorites seasons of the year. It's the perfect time for friends, family, and yummy treats! Get into the autumn spirit with this delicious spin on caramel apples. Juicy apples, creamy chocolate and caramel, topped with crunchy gourmet pecans, makes for a decadent but refreshing dessert to share with loved ones!
The best part is that you can swap out toppings for your favorites! First, pick your favorite variety of apple. Then, for the chocolate, consider semi-sweet, milk, dark, or white chocolate! For the crunchy element, we used Lehi Valley's signature Kettle Sweet Pecans, to be exact. However, you're free to select whichever crunchy snack you love best!
Chocolate Caramel Apples with Gourmet Pecans
Ingredients
- 2-3 Large Apples (Your favorite variety)
- 3 cups semi-sweet chocolate chips
- 1 tbsp coconut oil
- 1 cup melted caramels
- 1/2 cup chopped Butter Toffee Pecans
Instructions
- Line a baking sheet with nonstick parchment paper.
- Using a sharp knife, cut apples vertically on either side of the core. Discard core. Then, cut the apples into 1/2" slices.
- Optional: Cut a slit into the bottom of each apple and insert a Popsicle stick.
- Place the chocolate chips in a microwave-safe bowl and microwave them to melt the chocolate. To avoid scorching, start with 30 seconds at 50% power then stir. As needed, continue in 10 second increments at 50% power (stirring in between) until the chocolate is fully melted and smooth. (You can also use a double-boiler method if you prefer.)
- Add coconut oil and stir until smooth.
- Dip the apple slices into the chocolate, coating both sides, then place them on the parchment paper.
- Melt the caramels. We used Kraft caramels. There may be melting instructions on the package. If not, we recommend placing them in a microwave-safe bowl and microwaving for 30-60 seconds, stirring regularly until the caramel is melted and smooth. You can also add a little bit of water if the caramel is too thick to drizzle.
- Drizzle the melted caramel over the apples. Note: caramel cools very quickly. If it starts to thicken up as you are drizzling, you can always microwave it for a few more seconds to remelt it.
- Sprinkle crushed pecans over the apples.
- Place baking sheet in the fridge for an hour to allow chocolate and caramel to harden.
