Macadamia & White Chocolate Snack Bars
So you’ve been making a bunch of homemade nut and seed butters, but how else do you enjoy them, besides spreading on toast or crackers? Well, this homemade snack bar is a great way to enjoy that creamy, rich macadamia nut butter in another easy recipe. And these chewy, satisfying bars are no-bake and gluten-free*.
Ingredients
• 1 1/4 cups crispy rice cereal (try to find a brand that doesn’t add sugar)
• 1 cup quick-cooking oats
• 1 cup dates (pitted)
• 1/3 cup brown rice syrup
• 1/2 cup macadamia nut butter (see recipe here)
• 1/4 cup coarsely chopped Raw Macadamia Nuts
• 1/4 cup mini white chocolate chips (or coarsely chopped large chips)
• 2 Tbsp ground flax-seed (use golden if you have it)
• 1 tsp vanilla extract
• Pinch sea salt
Directions
Coat an 8” x 8” pan with butter, margarine or cooking spray and put aside.
Pulse dates in a food processor until finely chopped and clumped. In a large bowl, stir together the dates, crispy rice, oats, macadamia nuts, flax-seed and salt.
In a small saucepan over medium heat, combine the macadamia nut butter and brown rice syrup, stirring until melted.
Remove from heat, then stir in the vanilla extract.
Pour the macadamia nut butter mixture over the date/dry mixture and stir together.
Stir in the white chocolate chips.
Turn out the mixture into the buttered pan and pack firm.
Let cool completely, at least 1 hour, then cut into rectangular or square bars.
(Optional) Drizzle with 3 Tbsp white chocolate chips melted with 1 Tbsp milk. It's best to let set in the refrigerator for this option.
Makes 9, 2.5" square bars
