Pumpkin Pie Granola Whoopie Pie

With it's rugged features and chiseled good looks this whoopie pie might not be as sleek as it's cousin the Classic Whoopie Pie. But what it lacks in streamline it more than makes up for in flavor with Pumpkin puree, pumpkin pie spice, and most importantly Pumpkin Pie Granola! With a whirlwind of flavors and textures, this Pumpkin Pie Granola Whoopie Pie is sure to be just as popular as all the rest.

Ingredients

  • 1/4 cup butter softened
  • 1 1/2 cups brown sugar
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 cups flour
  • 2 1/2 cups Pumpkin Pie Granola
  • 1/2 cups mini chocolate chips
  • Marshmallow Creme (use a tub of pre-made or this great recipe from Martha Stewart)
  • 2 oz. Spiced Pumpkin Brittle

Directions

Preheat oven to 350˚. Cream butter. Add sugar and pumpkin puree and mix well. Add egg, vanilla and pumpkin pie spice and mix well. In another bowl mix dry ingredients. Add to butter mixture and mix until well combined. Drop by rounded tablespoon-fulls (about 1 1/4 inch) onto a nonstick cookie sheet. Bake for 12-14 minutes. Take two cookies and make a sandwich with Marshmallow Creme as the filling. Finely crush the Pumpkin Spice Brittle and dust it on the edges of the creme filling.

These large, delicious and chewy cookies have all the nice spice of pumpkin pie, but with no pumpkin puree. With a tall glass of milk and cuddled up in your favorite armchair, what better treat could you ask for on a crisp Fall day?

  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 cups flour
  • 2 1/2 cups Pumpkin Pie Granola
  • 1/2 cups mini chocolate chips

Directions

Add to butter mixture and mix until well combined. Drop by large rounded tablespoon-fulls (about 1 1/4 inch) onto a nonstick cookie sheet. Bake for 12-14 minutes.
